Like baking any fruit, the trick is to balance a little bit of sweetness with lots of flavour. This recipe uses thyme to do that, so there’s another element to the dessert. You can also serve it with something that will add another flavour dimension, like Greek yoghurt or crème fraîche.
- 3 semi-ripe nectarines
- 1/2 tbsp brown sugar
- a few sprigs of thyme
- Greek yoghurt to serve
Heat the oven to 175C.
Slice your nectarines in half and take out the stones.
Lay them out in a dish and scatter with the brown sugar. Take some of the leaves off the thyme and scatter across the peaches, lay the rest of the stalks on top.
Bake for 20-25 minutes, until golden brown and caramelised.
Take off the thyme stalks and serve immediately with Greek yoghurt.
